ONE-Bowl Cookie

Don’t you love it when you find a recipe that only requires one bowl? While I love making desserts at home I always hate the clean-up. I actually end up not making a lot because it always makes such a huge mess!

So I am always happy to share any one-bowl recipe I make with you guys.

These cardamom tangerine cookies were another happy accident and make the perfect gluten-free cookie recipe. I was just trying to create something different because let’s face it I am sick of just chocolate chip cookies (thanks for that boys!).

I actually thought my kids would hate it, because let’s be real my home baking is not always well received, especially if I try and cut the sugar! So I was not sure how these would go. I did add sugar to these so I was not super surprised when they devoured them. I actually had to bake a second batch to photograph hahaha.

OH, one tip, do NOT add in too much tangerine or pulp otherwise the cookies will turn out bitter!

What could be better then a 1-bowl coolie recipe. These gluten free, plant-based cookies are a delicous treat. Perfect for the holiday they are spiced with cardamom and tangerine.

Ingredients

  • 1 cup bobs red mill gluten free flour (or whatever GF flour you can get)

  • 1/2 cup buckwheat flour (or sub with more GF flour)

  • 1/2 cup quick oats

  • 1 cup oat milk

  • 1/4 cup tangerine juice

  • 2 tbs coconut sugar

  • 2 tbs maple syrup

  • 6 cardamom pods with seeds crushed or 1/4 tsp of ground cardamom

  • 1/4 tsp salt

  • 1 tsp each baking powder and baking soda

  • 3/4 cups dark chcolate chips (optional)

Directions

  • Preheat oven to 350 degrees. meanwhile in a large bowl mix all the dry ingredients (flour, oats sugar and spices). Mix well to combine.
  • Then add in all the remaining wet ingredients and stir to combine. Then if you like add in the dark chocolate and stir until mixed.
  • Scoop onto a baking pan, you shoudl get about 12-14 cookies). Bake in the oven for roughly 25 minutes.

Notes

  • you can make these cookies using only buckwheat flour and quick oats but they will turn out a bit denser, but still delicious!
