Start your day right with these easy pancakes. Gluten-free and plant-based they are perfect enough even for weekdays.

As a mom of 3 very energetic boys, I am always so mindful about how they start their day. I try and make sure that they start the day with a healthy, hearty breakfast. I find breakfast to be so important. It affects our energy level, attitude and ability to focus. So feeding them, and myself, a hearty breakfast is important so they can go on with their day with all the fuel they need.

Thus a hearty breakfast is not something we reserve for the weekends. We actually eat the quick ones those days when we can be home to snack (or have a second breakfast later). We use to be big on steel cut oats and eggs but now a big stack of pancakes works so well. I try and make extra on Sundays or another great option is to use a good mix that is low in sugar and uses protein-rich flours. I LOVE the buckwheat mix by Ecoideas!

Easy pancakes, 1-Bowl Buckwheat Berry Pancakes

Ingredients

  • 1 tbs vegan butter

  • 1 1/2 cups of buckwheat flour

  • 1/2 cup oat flour

  • 1 ripe banana

  • 1/2 cup wild blueberries or currants

  • 2/3 cups plant milk

  • 1 tbs maple syrup

  • 1 tsp chia seeds

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • 1/4 tsp salt

Directions

  • In a medium mixing bowl smash the banana with a fork. Add in the plant milk and maple syrup and mix. then mix in the rest of the ingredients (except the berries). The batter should be thick but still wet (add more milk if it is to dry)
  • Then fold in the berries being careful not to smash them as you mix.
  • Heat a frying pan over medium heat and add in the vegan butter. Add 1/4 cup of the batter to the pan. Once the batter starts to bubble, flip and cook for an additional 2 minutes
  • Spread on some nut butter, drizzle some berries on top and top it all off with some maple syrup
