Don’t we all need simple, easy, guilt-free recipes to make when we are in a pinch.. or just need a break from complicated dinners!
As a busy mama of three boys who LOVE to eat, I not only need easy recipes but, they better taste good and be kid-appropriate too, no pressure right! But just a short while ago the thought that a noodle bowl could be easy or even kid-appropriate was not in my realm of possible dinner options. But boy was I mistaken about how simple these can be and now these bowls are a staple.
Since my kids, like many kiddos, love raw veggies that is what I use in these bowls. It saves cooking time and gets them to eat a bowl full of veggies, win-win in my books. Just use the veggies your kids prefer or that are about to expire. This way you can customize each bowl and change it up when you get bored of the flavour.
What I love to do is cut up a bunch of veggies and place them in little bowls. Then when it is time to assemble to noodle bowls my kiddos get to select what they like. I find giving them that control gets them excited about their meal and in return, they eat way more then if I just assembled it for them.
These simple noodle bowls come together in about the same amount of time as it takes to boil the noddles.
Now the only thing I always make sure to add and be mindful of when making these is a protein source. You can add either baked tofu, steamed edamame beans or rinsed canned black beans. That way you know you are getting a complete meal with carbs from the noodles, veggies, and protein.

1/4 cup water
Juice from 1 lime
2 garlic cloves
1 tbs sirracha
1 tbs maple syrup
1 tbs soy sauce
1/4 cup toasted sesame oil
1 tbs honey or sub maple syrup
1 tbs mustard
1 tbs lime juice
1/4 tsp salt
