Now the main reason these are so easy is because I make a smoothie almost every day. Usually, it’s my family’s favorite monster smoothie. True story, it once brought a football defender, from my husband’s team, back to life from a nasty hangover. They went on to win the championship and I like to think my smoothie helped a little, lol.
For the monster smoothie recipe, I’ll leave a more detailed recipe option here, if you have more time this is a very nutritious version (Monster Smoothie recipe).
These plant based breakfast parfaits are simply layers of overnight oats and smoothie, and topped with a VERY simple and totally optional granola. I hope you enjoy them, make sure to tag me if you make these so I can feature you over on instagram!
