We are heading to the cottage this weekend so I packed us up some road dinner! . I've been loving these @onyxcontainers because they are just the perfect size for rice bowl 🤣 . But seriously I never use to pack food for the road. We always stopped at whatever coffee place was on the way and whatever joint sounded good at the time.... and then I always felt gross and tired and yucky. It took me a while to realize how much food affects me, but I'm so glad I did. . It doesn't have to be gourmet, keep it simple and nutritious because who has time to make an elaborate meal when you could be traveling, am I right!
Lentil bolognese! This 1 pot sauce is perfect for those crazy dinner nights, like when your husband is away yet again for work and your home alone with 3 hungry kids!!! . The base for this sauce is a staple at our house but it definitely shifts depending on our mood. This recipe was first inspired by my husbands amazing sauce and my love of all things lentils! However, my son asked me for a cheesy sauce ( after I already cut all the tomatoes 🙄) so I improvise with lots of nooch! . . Ingredients: 1 white onion, chopped 3 garlic cloves, minced 2 large heirloom tomatoes, diced small 2 tbs tomato paste 1/2 jar of crushed tomatoes 3 cups veggie stock 1 cup lentils 2 tbs coconut sugar 2 tbs fresh basil, minched 2 tbs Oregano 1/4 cup nutritional yeast Salt and pepper . . Method: 1. In a large sauce pan over medium low heat satuee the onion and garlic in a bit of water or olive oil. 2. Once soft add in the herbs, spices, and sugar and cook until fragrant. 3. Add in the remaining ingredients and cover. Simmer on low heat until the lentils are cooked. 4. Add in some cooked pasta to the sauce and stir. Sprinkle some extra nooch and enjoy! . *note: if your lentils are not pre soaked you may need to add in a bit more water or veggie stock. Also you may like to adjust the amount of sugar depending on your preference. 2 tbs is what works us!
OK so this recipe was inspired by a parenting fail moment 😖.... . We have recently made friends with our neighbour across the street, her son and Jaden ride the bus together. Its been such a refresher after a long winter to meet new parents. Our boys have had play dates almost every day and I actually have an adult to talk to ;) However, I am sure many of you moms can understand this, her kids don't eat like we do. Jaden came home yesterday after eating 2 bowls of nutella (you read that right!!). Of course he couldn't stop talking about it. First I ran to Google weather Nutella is gluten-free! It is thank goodness 😓 but I also read all the ingredients!!! . You guys know we keep a pretty clean diet however, I also believe that kids should be kids and they will want to explore different flavours. I took that moment as a chance to discuss why it's important to eat healthy but also why its OK to have treats once in a while. Because lets face it is OK. I believe if I shelter my child and get super anxious about foods then I will pass these negative feeling to him. I dont want him to go over induldge when he is older because we never let him eat some sugar once in a while as a child. . My proud moment was that when he came home telling me about the nutella he asked me if we could make a healthy version. I was all up for that! We always explain to him that eating a healthier treat that we make at home means he can have a bigger portion then if we bought something loaded with sugars, fillers and oils. . The most common question I always get is how I get my kids to eat such fresh healthy foods. . Honestly, there is no big secret. The key is simplicity! Kids like simple meals and simple meals are easy to make. . That's why we have been on a buddah bowl kick. I was gardening all day and lost track of time for lunch. This bowl took me less then 15 minutes to make. While the quinoa cooked I cut up the veggies, and steamed the soy beans. . It helps to prep a little. I hate food prepping but I do make a big batch of beans and some sauces on sundays. An alternative is to use canned beans but trust me the minimal effort it takes to cook them yourself is worth it. I also make 2 dressing to have on hand. Good for bowls or salad or as a marinade. I always make one that is more full flavoured, for the adults, and a milder (usually with maple syrup) one for the kids. That way it's easy when we make bowls. I also let my kids pick what toppings they want however, the carbs and protein are not negotiable. . Build meals around what your kids love. For example for Avery that's chickpeas and olives. And let them have some control, it's amazing how much more interested in food they can be if they feel in control of their choices. . . . . . .
Happy mothers day to all the gladiators out there 🌷🤩 . In my experience being a mother changes you in ways you can't imagine. Its challenging and it makes you face your insecurities and fears. You have to give up a lot of your time, your space and your body..but it is the most beautiful, fulfilling and rewarding experience as well. Motherhood is not always glorious or even fun sometimes but without challenges, be that motherhood, a job, our fitness journey, or a disease, we would never be forced to grow or adapt and we can become stagnant. . We are defined by our hard moments and the key becomes how you face it and what you do with the challenge. . Without these kids I would not have grown and changed into who I am today. This meal was super simple and delicious. I always bring up simple meals so I'm not stuck cooking all weekend. Plus we have no running water so not only does it make me appreciate water and how lucky we are to have it, but also makes me reduce dishes.... because that's a cold lake 😥 .
