Oh and did I mention they don’t require any cooking! to prepare and require no cooking! Just another simple plant based breakfast option for you!

Now the main reason these are so easy is because I make a smoothie almost every day. Usually, it’s my family’s favorite monster smoothie. True story, it once brought a football defender, from my husband’s team, back to life from a nasty hangover. They went on to win the championship and I like to think my smoothie helped a little, lol.

These plant based breakfast parfaits are simply layers of overnight oats and smoothie, and topped with a VERY simple and totally optional granola. I hope you enjoy them, make sure to tag me if you make these so I can feature you over on instagram!

Don’t Skip Breakfast with these Healthy Plant Based Breakfast Parfait [Recipe]

Prep time



A healthy plant based breakfast option that can be prepared ahead of time and enjoyed all week. Great for busy families and a kid favourtie. Take to go or enjoy as a quick meal at home.


  • Smoothie recipe
  • 2 cups water

  • 1 cup frozen blueberries

  • 1 cup frozen mangoes

  • 1 frozen banana

  • 2 pitted dates

  • 2 tbs vegan protein powder

  • 1 tsp spirilina

  • Overnight oats
  • 1 1/2 cup of quick-cooking oats

  • 1 cups of water

  • 2 cups of plant based milk, oat is my fav

  • 4 tbs maple syrup (1 tbs for each jar)

  • Easy Granola
  • Your favourite granola bar. I love the ones by Welo


  • In a high speed blender, add all the smoothie ingredients and blend until smooth.
  • Meanwhile, mix the oats with water and plant milk. On a baking sheet break apart the granola bar into pieces and bake at 350 for 10 minutes.
  • Next assemble to parfaits. Into a small mason jar, layer the oats and smoothie. Leave some room on top to add in the granola and any fresh fruit you desire. Drizzle with 1 tbs of maple syrup into each jar and then close and place into the fridge.
  • Take out and enjoy in the morning or as a snack. These are good in the fridge for 4 days.
