Vegan sloppy joe’s

Guys, these were so surprisingly easy to make! And came together so quickly too. I actually have never made sloppy joe’s before (even before I was vegan) but I got such a craving for one out of the blue today. Actually I found these amazing hot dog buns and needed something delicious to fill them with πŸ˜‰

I used lentils cooked in some homemade veggie broth which turned out amazing just on their own. I used a blend of brown lentils which hold together well and red lentils, which help to thicken the sauce. Then I added those bad boys to some fresh sauce and let the flavors marinate for a few minutes. The sauce was made with some chopped onions and garlic and canned tomato sauce. They key ingredient was the vegan friendly worcestershire (I like this brand) sauce and coconut sugar to balance and crushed cumin seeds and paprika to finish off the flavor profile. Yum!!

OK now on to the recipe.. which is why you came anyways right!

Vegan sloppy joe's

Super sloppy and totally worth it.

    For the lentils

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • pinch of salt
  • 1 cup of brown lentils
  • 1/2 cup of red lentils
  • 3 cups of veggie broth
  • For the sauce

  • 1 white onion, minced
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 2 tbs coconut sugar
  • 2 tbs vegan worcestershire sauce
  • 1 tbs ground cumin seeds
  • 1 tbs paprika
  • 1/4 tsp chili powder
  • 1 can of crushed tomatoes

  1. Start by cooking the lentils. In an instant pot or medium sauce pan add the onions, garlic, salt, lentils and veggie broth. If using an instant pot set to bean setting for 12 minutes. I using a pot bring to a boil then simmer until lentils are soft but firm.
  2. Meanwhile start the sauce. Saute the onions, shallots and garlic in a medium pot over medium heat with some water or EVOO. Once soft add in the spices and cook for another 2 minutes, until fragrant. Then add in the tomatoes and worcestershire sauce and continue cooking on low heat.
  3. Once cooked add in the lentils and continue cooking until sauce is warm and well combined.
  4. Serve with some fresh red and green onions on a nice toasty bun

Enjoy! And don’t forget to tag me if you make this recipe (! I love to see your creations.
