Ingredients
1tbspolive oilextra virgin
1oniondiced
2clovesgarlicminced
2tbsptomato paste
3roma tomatoesor 1 can of diced tomatoes
4 cupswater
1cupred lentils
1cankidney beanswashed and drained
1canblack beanswashed and drained
1cancrushed tomatoes
2bay leaves
2tbspcoconut sugar
1tbsporegano
1tbspcuminground
½tbsppaprika
2tspchili powder
¼tspsalt
Instructions
Over medium high heat add the oil to a large pot. Saute the onions until they are soft and translucent. Then add in the garlic and all the spices. Cook for another few minutes (until fragrant).
Add in the tomatoes, tomato paste, red lentils and water, cover and bring to a boil. reduce the heat and simmer until the red lentils are soft, roughly 10-15 minutes.
Add in the kidney beans, black beans, and crushed tomato and cover. Cook for another 10 minutes or until the beans are warmed through.
