Prepare the Mango Layer: In a blender, combine all the ingredients for the mango layer. Blend until smooth, adding more coconut water if needed for consistency.
1 cup frozen mango chunks, 1 banana, ¼ cup coconut water, 1 tablespoon lime juice, 1 tablespoon maple syrup
Pour and Freeze: Pour the mango mixture into popsicle molds, filling each about ⅓ full. Freeze for 1 hour to set the first layer.
Prepare the Cherry Layer: Rinse the blender. Blend all the ingredients for the cherry layer until smooth.

Complete the Molds: Pour the cherry mixture over the set mango layer, filling the molds to the top.
