I find it much easier to make simple recipes that I know and love for the holidays. Because as much as food unites us and brings us together, being a relaxed and happy host is just as important!

There are so many easy lentil recipes and I find lentils to be one of the best replacements for meat in many dishes. Lentils make a great bolognese sauce (family bolognese recipe) and are easy enough to add to a rice or noddle bowl. It is one of the first beans my kids loved after we transitioned to a vegan diet.
Yes, I added! Thank me after you try it. I actually got the idea to add cinnamon in after trying a spiced taco recipe by Foodbymaria! It was game-changer good so I thought to experiment adding it to our lentil stew. Cinnamon is high in antioxidants and adds a rich wonderful flavor to this stew!

Easy comforting vegan lentil stew. an easy meal to make for the week ahead. This recipe is super nutricious and freezes well.
2 cups green lentils
1 tbs extra virgin olive oil
1 white onion, diced
2 garlic cloves, diced
2 cups diced white potatoes, about 2 small potatoes
2 cups diced carrots, about 1 medium carrot
2 cups green beans, quartered
2 cups of chopped kale
2 tsp each paprika
2 tbsp italian seasoning
2 tsp ground cumin
2 tsp garlic powder
2 tsp cinnamon
2 bay leaves
1/8 tsp crushed chili peppers
6 cups veggie stock
1 cup water
