I absolutely love fresh spring rolls with avocado, and so does my family. I fell in love with spring rolls after my first visit to a Vietnamese restaurant, where I was captivated by the authentic flavors and techniques. But, after discovering my severe gluten allergy, eating out became a challenge.

Luckily, I discovered that making spring rolls at home is easy, and I've been perfecting my recipe ever since. It's one of those meals my family of 5 can always agree on 100 percent of the time! Who can resist those fresh crispy veggies, with tender noodles, and creamy avocado all rolled up and dipped into a savory sweet Thai peanut sauce? Yum!

Avocado spring rolls are also easy to meal prep, store well, and are surprisingly great for taking on the go. We often bring them camping or on a hike. My favorite is my spicy noodle spring roll, but the classic avocado spring roll with Thai peanut sauce is a hit with my boys.

Making avocado spring rolls is easy, here are the fresh ingredients you need for this healthy meal:

Instructions for Making Avocado Spring Rolls

Step 1: Preparing the Rice Noodles:

Start by boiling a large pot of water and cook the rice noodles as per the instructions on the package. It's crucial not to overcook them. Once cooked, drain and rinse with hot tap water to stop the cooking process and remove excess starch. This step ensures the noodles are just right and don't stick together.

Step 2: Flavor the Rice Noodles:

Add your cooked rice noodles to a large bowl. Then pour in ¼ cup of sesame oil and mix until incorporated. This will add flavor and prevent your noodles from clumping as they rest.

Step 4: Prep Your Avocado & Veggies:

To prep your avocado, carefully slice your avocado in half (see image) and remove the pit. Then peel the skin to reveal the creamy fleshy part. Set your avocado cut side down onto a cutting board. Then using a sharp knife slice into thin strips.

Next, prepare your choice of fresh ingredients - washing and slicing the lettuce, basil, and red cabbage into thin strips. This not only makes the rolls more visually appealing but also easier to eat.

Pro tip: Letting kids choose their favorite veggies can make them more excited to eat their creations.

Step 5: Soften Spring Roll Paper:

Begin by pouring warm water into a large bowl or onto a plate with a raised edge. Gently dip and rotate a rice wrapper in the warm water for just a few seconds, until it begins to soften. Carefully remove it and place it on a clean, slightly damp surface. This step is crucial for making the wrappers pliable and ready for rolling.

Step 6: Fill Spring Rolls with Avocado

On the bottom third of the wrapper, arrange a small handful of the prepared rice noodles. Then, add a small amount of your fresh veggies and 2 slices of avocado. Be mindful not to overfill to ensure you can achieve a tight roll.

Then fold your rice wrapper over your ingredients, aiming for the center of the wrapper. Then fold each edge to the center (see image) and then roll.

Pro Tip: Put the avocado slices just above the noodles and veggies. When you roll it up, the avocado shows up nicely at the top, making your spring roll look and taste great. Just make sure not to pack too much in so you can roll it up tightly.

  • Don't Overcook Noodles: Overcooked noodles can become mushy and may ruin the texture of your spring rolls.

Why are my spring rolls ripping?
