Today, I’m excited to share another easy gluten-free weeknight recipe—juicy satisfying, gluten-free burgers packed with flavor and super simple to make!

There’s nothing quite like a family burger night—whether we're at home or camping, my three boys and I love grilling up delicious meals. But as someone who has to stay gluten-free, I was shocked to learn that most burgers contain wheat. That just doesn't work for me, so I set out to create a gluten-free burger recipe that keeps all the flavor without the gluten.

After years of camping and family BBQs, I’ve perfected our gluten free burger recipe, and I am excited to share it! Over the years, I’ve found that homemade burgers are cheaper, just as tasty, naturally gluten-free, and healthier than fast food burgers! It's all in the type of meat you use and the way you shape your patties! And I will share it all with you so you can have your own juicy, flavorful, gluten-free hamburgers to serve at your next gathering or fun weeknight dinner! Don't forget the french fries, or better yet, make these crispy yucca fries instead!

🍔Main Ingredients

We use simple ingredients for gluten-free burgers to create a juicy, flavorful patty. Here is everything you need to make your own juicy hamburger:

Ingredients for gluten-free burgers including ground beef, gluten-free Worcestershire sauce, gluten-free tamari, white onion, fresh garlic, chives, oregano, salt, pepper, and smoked paprika.
  • Regular Ground Beef (80% lean): I prefer and suggest using regular ground beef rather than lean ground for our gluten-free burgers. The fat content in regular ground is essential to keeping the burgers juicy, especially since we're not using eggs or breadcrumbs as binders.
  • White Onion: If you can, grate your onion instead of dicing it. This will help add moisture and a mild sweetness without overpowering the burger.
  • Fresh Garlic Cloves: What recipe is complete without garlic? Fresh garlic adds a rich, savory depth that complements the beef.
  • Gluten-Free Worcestershire Sauce: Gluten-free Worcestershire sauce can be easily found on Amazon or in the gluten-free section of most grocery stores. It adds a welcoming, savory umami kick to this recipe, and I highly recommend it. If you can't find this ingredient, check the substitutions below.
  • Gluten-Free Tamari or Soy Sauce: This adds depth and saltiness to the mix. Be sure to use a certified gluten-free soy sauce or opt for coconut aminos (soy-free). If you can't find either, check the substitution section.
  • Smoked Paprika: This adds a slightly smoky, earthy flavor that pairs well with grilled or pan-fried burgers.
  • Oregano: A touch of herbs for that extra aromatic layer.
  • Chives: Fresh and subtle, they bring a nice brightness to the patties.
  • Salt & Pepper: Simple seasonings to bring out the natural flavor of the beef.

🌭Substitutions

If you’re missing a few ingredients or want to adapt this gluten-free burger recipe to suit your preferences, here are some simple swaps that have worked for us:

  • Gluten-Free Worcestershire Sauce: If you can’t find gluten-free Worcestershire sauce, try using balsamic vinegar or coconut aminos. Both options bring a similar tangy, umami flavor.
  • Gluten-Free Soy Sauce: If soy is off-limits, coconut aminos is a great soy-free option. It's naturally gluten-free and adds a similar salty kick to the burger patties. You can also omit it and simply add another ½ teaspoon of salt.
  • Ground Beef: Want to change things up? You can easily swap the beef for ground turkey or even ground chicken for a lighter version of our gluten free burgers. Both pair well with the seasonings and create delicious gluten-free burger variations.
  • Gluten-Free Buns: Can’t find the best gluten-free burger buns? You can go bunless and serve these burgers in lettuce wraps or over a bed of greens as a low-carb option. Or make a bagel burger with our easy gluten-free bagel recipe (or my favorite dairy & gluten-free bagel recipe).

👩🏽‍🍳Step-By-Step Instructions

Step 1: Prep The Burger Mixture

In a large bowl, combine all the ingredients of our gluten free burgers. Mix gently with your hands until just combined. Be careful not to overmix—this can make the burgers tough.

Step 2: Form the Patties and Cool

Divide the mixture into 6 equal portions. Shape each portion into patties about ¾-inch thick. Press hard on the patties to ensure they are well-formed. I recommend placing your patties back into the fridge for 10 minutes to cool them down. Keeping the meat cold will help them cook well and stay well formed.

Chef TIP: Press a small indentation in the center of each patty with your thumb to prevent the burgers from puffing up as they cook. The indentation will ensure you get juicy burgers that cook evenly.

Step 3: Cook your Gluten-Free Burgers

I prefer to grill my burgers when possible but here are the two cooking methods that have worked well for us:

  • Grilling: Preheat your grill to medium-high heat. Place the patties on the grill and cook for about 4-5 minutes per side, or until they reach your desired doneness (160°F/71°C for medium-well). Resist the urge to press down on the patties with a spatula, as this squeezes out the juices.
  • Stovetop: Heat a nonstick or cast-iron pan over medium-high heat. Cook the patties for 4-5 minutes on each side, following the same tips as for grilling.

Chef TIP: To get the best results, let the pan or grill heat up fully before adding the patties. This will give them a nice sear and lock in moisture.

Step 4: Let Them Rest

Once the burgers are cooked to your liking, transfer them to a baking sheet or plate and let them rest for about 2-3 minutes. This allows the juices to redistribute, making your burgers even more flavorful

Step 5: Assemble and Serve

Place your burger on gluten free burger bun, and add your favorite toppings like, lettuce, tomatoes, or a slice of cheese and enjoy them with fresh-cut potatoes. Serve immediately.

These gluten free burgers are versatile and taste great even as bunless burger sliders or served with a salad for a low-carb option.

💡Recipe Tips

Here are some of my tried-and-true tips to help you get perfect gluten free burgers every time:

  1. Press the patties firmly: Since we’re skipping eggs and breadcrumbs, press them firmly when shaping them. This helps them hold together while cooking. Giving them an extra press in the center with my thumb also helps avoid that burger "puff" in the middle.
  2. Don’t overmix the beef: Handle the beef mixture gently—overmixing can lead to tough burgers. Combine the ingredients enough to hold them together, and you'll get juicy burgers every time.
  3. Keep them Cold: Ensure your meat and patties are cold. I recommend placing the formed patties back into the fridge for 10 minutes to ensure they are nice and cold before cooking.
  4. Use a hot grill or pan: To ensure a good sear and lock-in flavor, make sure your grill or pan is hot before adding the burgers. This will give you that perfect crust on the outside while keeping the inside moist.
  5. Rest the burgers: After cooking, let your burgers rest for a few minutes to retain their juices. Trust me, it’s worth the wait!
  6. Gluten-free bun tip: Not all gluten-free buns are created equal! Toast them lightly to prevent them from getting soggy and add some crunch.

⏲️ Save Time With These Tips

Batch prep your patties! On busy days, I like to make double the amount of our gluten free burgers and freeze half. Form the patties, stack them with parchment paper in between, and pop them in an airtight container in the freezer. That way, you have burgers ready to go for another meal, with minimal prep.

Another trick? Grate your onion and garlic directly into the mixing bowl to save time on chopping and cleaning extra dishes.

🍴Recipe Variations and Leftover Ideas

Here are a couple of ways to mix up this recipe to suit your family’s taste or use up leftovers:

  1. Cheesy Burger Variation: During the last minute of cooking, add a slice of cheese (dairy or dairy-free) on top of the patties. The cheese will melt nicely and give the patties that extra bit of flavor!
  2. Spicy Burger: Like a bit of heat? Add 1 teaspoon of cayenne pepper or a couple of dashes of your favorite hot sauce to the beef mixture before forming the patties. It adds a kick without overpowering the other flavors.
  3. Leftover Burgers: Crumble your leftover gluten free burgers over a salad for a low-carb lunch, or tuck them into gluten-free wraps (or a lettuce wrap) for a quick and easy meal for the whole family.
  4. Burger Pasta: One of my favorite ways to use up leftover gluten-free burgers is to crumble them into a pot of marinara sauce and let it simmer for a quick and hearty gluten-free meat sauce!

🥡How To Store This Recipe

To keep these gluten-free burgers fresh, here’s how to store them:

Uncooked Patties: Store uncooked patties in an airtight container in the fridge for up to 2 days. If you want to freeze them, place parchment paper between each patty and store them in a freezer-safe airtight container for up to 3 months.

Cooked Burgers: After cooking, let your gluten free burgers cool completely. Store them in an airtight container in the fridge for up to 3 days. For freezing, place cooked burgers on a baking sheet in the freezer for 1-2 hours before transferring them to an airtight container or freezer bag. This prevents the burgers from sticking together.

Why aren’t my gluten-free burgers sticking together?

Without traditional binders like eggs or flour, it’s essential to press the patties firmly when forming our gluten free burgers. Also, avoid using lean ground beef—aim for an 80/20 mix for extra moisture, which helps them stay together.

Can I make these gluten free burgers in an air fryer?

Yes! To make our gluten-free burgers in the air fryer, preheat your air fryer to 375°F (190°C) and cook the patties for about 10-12 minutes, flipping halfway through. You’ll get a crispy outside and a juicy inside!
