But as someone who has to stay gluten-free, I was shocked to learn that most burgers contain wheat. - White Onion: If you can, grate your onion instead of dicing it. This will help add moisture and a mild sweetness without overpowering the burger.
- Fresh Garlic Cloves: What recipe is complete without garlic? Fresh garlic adds a rich, savory depth that complements the beef.
- Gluten-Free Worcestershire Sauce: Gluten-free Worcestershire sauce can be easily found on Amazon or in the gluten-free section of most grocery stores. - Gluten-Free Worcestershire Sauce: If you can’t find gluten-free Worcestershire sauce, try using balsamic vinegar or coconut aminos. Both options bring a similar tangy, umami flavor.
- Gluten-Free Soy Sauce: If soy is off-limits, coconut aminos is a great soy-free option. It's naturally gluten-free and adds a similar salty kick to the burger patties. You can also omit it and simply add another ½ teaspoon of salt.
- Ground Beef: Want to change things up? You can easily swap the beef for ground turkey or even ground chicken for a lighter version of our gluten free burgers. Both pair well with the seasonings and create delicious gluten-free burger variations.

In a large bowl, combine all the ingredients of our gluten free burgers. Mix gently with your hands until just combined. Be careful not to overmix—this can make the burgers tough.
Step 2: Form the Patties and Cool
Divide the mixture into 6 equal portions. Shape each portion into patties about ¾-inch thick. Press hard on the patties to ensure they are well-formed. I recommend placing your patties back into the fridge for 10 minutes to cool them down. Keeping the meat cold will help them cook well and stay well formed.
Chef TIP: Press a small indentation in the center of each patty with your thumb to prevent the burgers from puffing up as they cook. The indentation will ensure you get juicy burgers that cook evenly.
Step 3: Cook your Gluten-Free Burgers
I prefer to grill my burgers when possible but here are the two cooking methods that have worked well for us:
- Grilling: Preheat your grill to medium-high heat. Place the patties on the grill and cook for about 4-5 minutes per side, or until they reach your desired doneness (160°F/71°C for medium-well). Resist the urge to press down on the patties with a spatula, as this squeezes out the juices.
- Stovetop: Heat a nonstick or cast-iron pan over medium-high heat. Cook the patties for 4-5 minutes on each side, following the same tips as for grilling.
Chef TIP: To get the best results, let the pan or grill heat up fully before adding the patties. This will give them a nice sear and lock in moisture.
Step 4: Let Them Rest
Once the burgers are cooked to your liking, transfer them to a baking sheet or plate and let them rest for about 2-3 minutes. This allows the juices to redistribute, making your burgers even more flavorful

- Press the patties firmly: Since we’re skipping eggs and breadcrumbs, press them firmly when shaping them. This helps them hold together while cooking. Giving them an extra press in the center with my thumb also helps avoid that burger "puff" in the middle.
- Don’t overmix the beef: Handle the beef mixture gently—overmixing can lead to tough burgers. Combine the ingredients enough to hold them together, and you'll get juicy burgers every time.
- Keep them Cold: Ensure your meat and patties are cold. I recommend placing the formed patties back into the fridge for 10 minutes to ensure they are nice and cold before cooking.
- Use a hot grill or pan: To ensure a good sear and lock-in flavor, make sure your grill or pan is hot before adding the burgers. This will give you that perfect crust on the outside while keeping the inside moist.
- Rest the burgers: After cooking, let your burgers rest for a few minutes to retain their juices. Trust me, it’s worth the wait!
- Gluten-free bun tip: Not all gluten-free buns are created equal! Toast them lightly to prevent them from getting soggy and add some crunch.
⏲️ Save Time With These Tips
Batch prep your patties! On busy days, I like to make double the amount of our gluten free burgers and freeze half. Form the patties, stack them with parchment paper in between, and pop them in an airtight container in the freezer. That way, you have burgers ready to go for another meal, with minimal prep.
Another trick? Grate your onion and garlic directly into the mixing bowl to save time on chopping and cleaning extra dishes.

Uncooked Patties: Store uncooked patties in an airtight container in the fridge for up to 2 days. If you want to freeze them, place parchment paper between each patty and store them in a freezer-safe airtight container for up to 3 months.
Cooked Burgers: After cooking, let your gluten free burgers cool completely. Store them in an airtight container in the fridge for up to 3 days. For freezing, place cooked burgers on a baking sheet in the freezer for 1-2 hours before transferring them to an airtight container or freezer bag. This prevents the burgers from sticking together.
