Hello friends! Today, we are continuing our refreshing drink series with something that brings back my childhood summer memories (with way less food coloring and sugar!). We are making a fun tropical pineapple slushie recipe!

This refreshing summer drink features juicy pineapple chunks and fresh mint blending into a slushie texture that both kids and adults will love. With every recipe I develop, I bring a little Brazilian flare to the table. So, we added a little coconut cream and fresh lime juice to bring up the slushie flavors.

You can eat it with a spoon or melt it into a thick smoothie! This recipe is easy to make and fun to drink. It’s perfect on a hot day or backyard BBQ. It is versatile enough to add protein powder for a post-workout treat or a shot of rum for adult parties.

More Fun Refreshing Drink Ideas:

Perfect as refreshing summer drinks or drinks to serve at your next party:

  • Brazilian Batida De Coco (Coconut Cream Cocktail)
  • Coconut Kiss Cocktail (Mocktail Version)
  • Brazilian Caipirinha (Lime Cocktail)

  • Versatile: Add a scoop of protein powder or a shot of Run, and this slushie pairs well with either, depending on your mood :0)
  • Kid-Friendly: Our pineapple slushie is naturally sweet and fun to make, this drink is perfect for kids to help with, from adding ingredients to blending.

🧠 Benefits of Pineapple: Why Make This?

This pineapple slushie is delicious and packed with nutrients! Along with being delicious and refreshing, it is yet another reason I make this for my kiddos often :0)

  • Supports your immune system: Pineapple is rich in vitamin C, essential for a healthy immune system (1, 2). It can help increase white blood cell count, enhancing the body's ability to fight infections (3, 4).
  • Supports Heart Health: Pineapple contains antioxidants, potassium, and fiber, all of which support cardiovascular health (3, 4).
  • Anti-Inflammatory Properties: Pineapple is a natural source of bromelain, an enzyme with potent anti-inflammatory effects (3, 4).
  • Brain Benefits: Pineapple provides essential nutrients like manganese and vitamin B6, which are crucial for brain function (4, 5).

🍍Ingredients

Our pineapple slushie recipe is the perfect treat for a hot summer day, featuring refreshing ingredients that blend into a creamy slushie, icy drink. Here is what you will need:

Ingredients for pineapple slushie on a board, including pineapple chunks, lime, orange juice, coconut milk, and various spices.
  • Frozen Pineapple Chunks: We have used both fresh and frozen pineapple pieces for this recipe. However, I prefer frozen as it ensures better quality, and you must use less ice! Frozen pineapple is naturally sweet with an already slushy texture, giving the drink a refreshing summer vibe.
  • Ice: Ice is what makes this recipe a slushy and not a smoothie, so don't skip this ingredient. Adding ice will ensure the texture of your pineapple slushie is just right.
  • Freshly Squeezed Orange Juice: I like to add a splash of OJ to enhance the fruity taste and provide a little sweetness without added sugar.
  • Lime Juice: Adding a bit of lime gives this slushie a citrusy kick that balances the sweetness of the ripe pineapple.
  • Coconut Water: Adds a hint of tropical flavor while keeping the drink light and hydrating.
  • Coconut Cream: Adds a creamy texture and a hint of coconut flavor, making the slushie richer and more indulgent.
  • Fresh Mint Leaves: Mint pairs so well with pineapple, helping to give a fresh, cooling flavor that perfectly complements the tropical fruits.
  • Sugar: Optional for extra sweetness, especially if the pineapple isn’t fully ripe.

Full qualities can be found in the recipe card.

🍉Substitutions

If you don't have all the ingredients for this pineapple slushie recipe, here are some simple substitutions:

  • Coconut Water: Replace with orange juice or another light fruit juice, such as apple or grape juice.
  • Orange Juice: Replace with pineapple juice or another citrus juice like lemon or grapefruit for a tangy twist.
  • Sugar: Use maple syrup, honey, or a few dates for a natural sweetener alternative.
  • Coconut Cream: Greek yogurt or a dairy-free yogurt can be used for a creamy texture, keeping it dairy-free if needed.
  • Fresh Mint Leaves: Basil or cilantro can be used for a unique and fresh herbal flavor.

👩🏽‍🍳Step-By-Step Instructions

Step 1: Prep the Ingredients

If using fresh pineapple, cut it into chunks and set aside. Freshly squeeze the orange and lime juice.

Step 2: Blend Your Pineapple Slushie

In a high-speed blender, combine the three cups of pineapple, coconut water, orange juice, lime juice, sugar, mint leaves, and coconut cream. Blend until smooth.

Step 3: Add Ice

Then add the ice cubes and blend again until you reach the desired slushie texture. If you are using fresh pineapples, you will want to add two full cups of ice. If you are using frozen pineapples, start with 1 cup, then check the consistency before adding the second cup.

💡Recipe Tips

Here are a few tricks I've learned to ensure the best texture and flavor when making this pineapple slushie recipe:

  • Use a High-Speed Blender: Ensure you have a strong, high-speed blender (like a Vitamix or Ninja blender) to handle the ice and frozen pineapple effectively. A weaker blender might struggle and leave chunks, which can affect the smoothness of the slushie.
  • Add Ice: This slushie recipe differs from smoothies because it uses lots of ice to achieve the right slushie texture. So don't skip this ingredient!
  • Pulse your Blender: Pulse your blender to prevent overmixing and ensure a slushy texture instead of a smoothie texture.
  • How to Prevent Separation: If the slushie starts to separate, give it a quick stir before serving. Separation can happen due to the natural ingredients, but a gentle stir will bring it back together.

🧒🏻Tips For Kids: Perfect Refreshing Snack

This refreshing pineapple slushie is the perfect summer drink for kids! It's naturally sweet, easy to make, and fun for kids to help in the kitchen. Here are some tips to make it even more enjoyable:

  • Get Them Involved: Let your kids help by adding the ingredients to the blender and pressing the buttons (with supervision, of course!).
  • Perfect After Playtime: Serve this slushie after a hot morning of play to cool them down and keep them hydrated.
  • Make It Fun: Garnish with fresh pineapple wedges and mint leaves for a fun, tropical twist that kids will love.

🍹Recipe Variations Ideas

  1. Pineapple Rum Slush: Add a splash of rum for a tropical pineapple slush cocktail. Perfect for adult gatherings!
  2. Tropical Pineapple Slush: For a more complex flavor profile, mix in tropical fresh fruit like mango, papaya, or banana.
  3. Berry Pineapple Slush: Add a handful of frozen berries like strawberries, blueberries, or raspberries to the mix for a vibrant, fruity twist that kids will love.

❄️How To Store This Recipe

Our pineapple slush drink is best enjoyed fresh, but if you have leftovers, you can store them in an airtight container in the freezer for up to a week. When ready to enjoy, let it thaw slightly and give it a good stir or re-blend to regain the slushie texture.

❔Recipe FAQ

Can I make this pineapple slushie ahead of time?

Yes, you can prepare it in advance and store it in the freezer. Just remember to thaw it slightly and stir before serving to restore the slushie consistency.

What if my slushie is too watery?

If your slushie turns out too watery, add a few more frozen pineapple chunks or ice cubes and blend again until you reach the desired slushie texture.

What if I don't have a high-speed blender?

If you don't have a high-speed blender, you can still make this slushie. Just blend the ingredients in smaller batches and blend longer to ensure the frozen pineapple pieces are fully broken down. You might need to add a bit more liquid to help the blending process.
