If you’ve ever struggled to find a gluten-free Rice Krispie treat recipe that taste just as good as the original, you’re in the right place. These chewy, crispy, and perfectly sweet treats are a family favorite in my house, with soft, gooey marshmallows and just the right amount of crunch.

But I have spent a long time testing and tweaking this recipe to ensure you get the right ratio of cereal to marshmallow. The results are perfectly chewy, soft rice crispies that hold their shape. They turned out so good that after nailing this recipe, we made 4 batches in two! We could not get enough!!

And since we are a mixed diet household, we also tested and included our top tips to make them dairy-free or vegan without sacrificing flavor. Most importantly, since many rice crispy cereals (like Kellogg's) and marshmallow brands aren’t gluten-free, we have also included detailed guidance on finding safe brands. Our gluten-free Rice Krispie treat recipe is a no-bake classic made with just a few simple ingredients. Each one plays a key role in making these treats chewy, sweet, and allergy-friendly for everyone to enjoy. Here is what you need:

  • Mini Marshmallows: These bring the sweetness and sticky texture that holds everything together. Ensure you use gluten-free marshmallows, like Doumak or Dandies (vegan), to ensure everyone is safe.
  • Unsalted Butter (or Dairy-Free Butter): Butter adds richness to the treats and helps the marshmallow not burn when melting. I often use dairy-free butter to make them allergy-friendly.
  • Vanilla extract (optional): A touch of vanilla enhances the flavor and makes the sweetness a little more complex.
  • Pinch of Salt: Just a pinch helps balance the sweetness, especially as we use unsalted butter.

Flexibility is key when making these gluten-free rice krispie treats, so here are a few easy swaps and recipe variations if you’re out of certain ingredients or need to adjust for dietary needs:

  • Vegan or Dairy-Free Rice Krispie Treats: Swap out butter for vegan butter or coconut oil and use Dandies vegan marshmallows for a dairy-free vegan version. If using Dandies, you will need 1 ½ times the amount of marshmallows.
  • Chocolate Dipped Rice Krispie Treats: Melt some dairy-free chocolate chips and drizzle over the top for a rich, sweet addition.
  • Peanut Butter Twist: Stir in a tablespoon of peanut butter (or a nut-free alternative) to add a hint of creaminess and depth.

Quickly add the gluten-free crispy rice cereal and reserved mini marshmallows to the pot. Stir until the cereal is evenly coated.

  • Use Low Heat: Always melt the butter and marshmallows over low heat, stirring constantly. This prevents scorching and ensures a smooth, sticky mixture.
